Spelt requires exceptional conditions. For centuries it has been cultivated in the cool climate of Scandinavia and in the mountain regions of Germany, Switzerland and Poland. RECIPE: - 40 ml of ORKISZ vodka - 25 ml of honey switchel - 10 ml of lemon juice - Top up apple cider - Grapefruit zest

Pour the first three ingredients into a shaker and mix well with ice. Then, pour the drink into an ice-filled glass and top up with apple cider. Stir with a spoon, add grapefruit zest and place on top of the drink. Honey Switchel: Put in a vacuum bag: 140 g of acacia honey, 60 g of buckwheat honey, 14 g of ginger, a handful of lemon molasses. Close the vacum and put it in the refrigerator for 24 h. Then add 80 ml of apple cider vinegar, mix and strain through a fine strainer.
