Rice is a staple food for more than 3.5 billion people worldwide, and in terms of human nutrition and calorie intake, it is the most important grain. In regions of the world where people live in extreme poverty, rice may be eaten two or three times a day.
Rice is a summer-grown cereal crop and there are about 1500 farm businesses in southern Australia producing rice, in rotation with other summer and winter crops. Production averages 600,000–800,000 tonnes per year, but in years of high water availability production may reach 1.2 million tonnes.
